Try this Grilled Chicken, Avocado and Goat Cheese Wrap as an alternative to standard sandwiches. A Dempster’s® 100% Whole Wheat Large Tortilla is filled with chicken, avocado and goat cheese then grilled until warm and toasty for an easy and satisfying lunch. Serves two.
INGREDIENTS
- 2 Dempster's® 100% Whole Wheat Large Tortillas, warmed
- 1 (150g) package of fully cooked and sliced chicken breasts
- 1/2 ripe avocado, sliced
- 1/2 cup (125 mL) shredded carrot
- 1/2 cup (125 mL) shredded lettuce
- 2 tbsp (30 mL) thinly sliced red onion
- 1/4 cup (60 mL) crumbled goat cheese
DIRECTIONS
- PREHEAT grill to medium-high heat; grease grate well.
- DIVIDE chicken evenly over the center of each warmed tortilla.
- TOP with avocado, carrot, lettuce, red onion and goat cheese. Fold in sides and roll up.
- GRILL wrap for 30 to 60 seconds per side or until grill-marked and toasted.
