Packed full vitamins and nutrients, avocado makes the perfect addition to this traditional Egg Salad Sandwich.

  • 4 Slices Dempster’s® 100% Whole Grains 12 Grain Bread
  • 3 Hard-boiled eggs, peeled and chopped
  • 1 tbsp (15 mL) Light mayonnaise or whipped salad dressing
  • Dash of hot sauce (optional)
  • ½  Avocado, diced
  • Salt and pepper
  • 1 Tomato, sliced
  • ½ cup (125 mL) Baby arugula


  1. MIX chopped eggs, mayonnaise (or whipped salad dressing), hot sauce (if using), avocado, salt and pepper in a small bowl.
  2. DIVIDE the egg salad between two slices of bread. Top each with tomato slices and arugula. Season with salt and pepper and top with remaining slices of bread.
