Bring classic summer flair to your table with a Crisp Waldorf Salad Sandwich. Packed with crisp and crunchy veggies, fresh fruit and walnuts and prepared on Dempster’s® White Bread, it's a delicious sandwich filling that's stood the test of time. Serves two.
INGREDIENTS
- 4 slices Dempster's® White Bread, toasted
- 1 red apple, cored and diced
- 1/3 cup (75 mL) halved green grapes
- 1 stalk celery, diced
- 1/4 cup (60 mL) chopped walnuts
- 1/4 cup (60 mL) mayonnaise
- 2 tbsp (30 mL) lemon juice
- 1/2 tsp (2 mL) each salt and pepper
- 4 leaves Boston lettuce
DIRECTIONS
- Toss together apple, grapes, celery, walnuts, mayonnaise, lemon juice, salt and pepper.
- Top each slice of toasted bread with lettuce and Waldorf salad mixture. Cap with remaining slice of bread.
- To serve, cut each sandwich in half.
Tip: Add leftover shredded roast chicken to the salad if desired.
