
Blueberry Bagel French Toast

INGREDIENTS
- 2 Dempster’s® Signature Blueberry Bagel
- 2 Eggs, whisked
- 1/2 Cup (125mL) Half and Half
- 2 Tbsp (30g) Sugar
- 1 Cup (250g) Mascarpone Cream Cheese
- 1 Tbsp (15g) Lemon Juice
- 1 Tbsp (15g) Icing Sugar
- 1/2 Cup (125g) Unsalted Butter
- 1/2 Cup (125mL) Maple Syrup
- 1 1/2 Cups (375g) Fresh Blueberries
- Additional Fresh Blueberries for Garnish
DIRECTIONS
- Divide or split the bagels.
- In a mixing bowl, whisk the eggs together with the half and half and sugar.
- Soak the bagel halves in the egg mixture for about 1 minute per side.
- Mix the mascarpone with lemon juice and icing sugar
- Heat up a frying pan and melt the butter over medium-high heat.
- Add in the bagel slices and cook for a few minutes on each side until golden and crispy.
- In a separate saucepan, heat the maple syrup and 1 cup of blueberries and bring to a quick boil, then reduce heat to medium and cook for about 10 mins. Allow this to cool to a lukewarm temperature, then stir in the remaining fresh blueberries.
- Spread the bottom halves of the bagels with the mascarpone mixture, then add blueberry syrup, and top with the remaining bagel halves.
- Top with blueberry syrup and fresh blueberries and serve.
