- 2 Dempster’s® Cheese Tortillas, warmed
- 4 Eggs
- 2 tbsp (30 mL) Milk
- Freshly ground pepper
- 1 tbsp (15 mL) Oil
- .5 cup (125 mL) Shredded Cheddar cheese
- .5 cup (125 mL) Fresh salsa
- 1 Ripe avocado, sliced
- .25 cup (60 mL) Coarsely chopped cilantro
Whisk together eggs, milk, and pepper.
Heat oil in skillet over medium heat. Add egg mixture and cook, stirring gently, until just set. Remove from heat.
Divide egg between warmed tortillas. Sprinkle with cheese. Top with salsa, avocado and cilantro. Fold in both edges, roll up and serve.
