Prepare a Mexican inspired chicken grilled cheese sandwich by adding in spicy and hot flavours to create one yummy lunch!

  • 1 tbsp (15 mL) Olive oil
  • .5  Onion, thinly sliced
  • 1 cup (250 mL) Bell pepper, thinly sliced (red, yellow and orange)
  •  Salt and pepper
  • .5  (150 g) Package Maple Leaf® Natural Selections® Oven Roasted Chicken Strips
  • 1 tbsp (15 mL) Cayenne pepper hot sauce
  • 1 tsp (5 mL) Lime juice
  • 2  Slices Monterey Jack cheese with jalapenos
  • 2  Slices Dempster’s® Stays Fresh™ White Bread
  • 1 tbsp (15 mL) Butter, softened


HEAT olive oil in a medium skillet over medium-high heat. Add onions and peppers. Cook for 3-4 minutes, stirring occasionally or until softened. Season with salt and pepper. Toss in chicken strips and hot sauce. Cook for 1-2 minutes and remove from heat.  BUTTER one side of each slice of bread. In a non-stick skillet over medium heat place one slice of bread, butter side down. Add a slice of cheese followed by chicken mixture and the remaining slice of cheese. Top with the second slice of buttered bread. Grill for 2-3 minutes per side or until golden brown and the cheese has melted.
