Lime juice really wakes up the flavours in this easy flavourful dinner dish.

  • 3  Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into strips
  • 1  (14 oz) Diced tomatoes, drained
  • 1  Jalapeno pepper, diced (optional)
  • 1  Red onion, thinly sliced
  • 1  Green pepper, seeded and sliced
  • ¼ cup (60 mL) Vegetable oil
  • 1 tbsp (15 mL) Chili powder
  • 1 tsp (5 mL) Cumin
  • 1 tsp (5 mL) Garlic powder
  • ½ tsp (2 mL) Dried oregano
  • 1  Lime
  • 12  Dempsters’s® Small 100% Whole Wheat Tortillas
  •  Ready prepared salsa
  •  Sour cream
  •  Grated Cheddar cheese


PREHEAT oven to 400°F (200°C). Line a baking sheet with parchment paper.  MIX together chicken, tomatoes, jalapenos (if using), onions and pepper in a bowl. Combine oil and spices in another bowl then drizzle over chicken and vegetables. Spread the mixture over the baking sheet and roast for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (74°C). Squeeze the juice of the lime overtop. Wrap the mixture in warm tortillas and serve with salsa, sour cream and grated Cheddar cheese.
