  • 2 Chorizo style sausages
  • 1 tbsp Vegetable oil
  • 1 Potato, diced
  • ½ red onion, diced
  • 4 Jalapeno Cheddar tortillas
  • ½ cup shredded Cheddar cheese
  • ½ cup Pico de Gallo or salsa
  • ¼ cup Cilantro sprigs


GRILL sausages over medium high heat until cooked through, about 10 minutes per side.
Cool and chop.

HEAT oil in skillet and brown potatoes. Add onions and cook until softened, about 5 minutes. Toss with chorizo until heated through.

DIVIDE sausage mixture over warmed tortillas. Top with cheese, pico de gallo and cilantro.

FOLD in sides and wrap up.
