Curry Roasted Cauliflower Wrap with Hummus and Feta

Enhance any meal with this aromatic Curry Roasted Cauliflower Wrap with Hummus and Feta. Wrapped in a Dempster’s® 100% Whole Wheat 10'' Tortilla, the sandwich features a delicious blend of textures and tastes. Curry pairs wonderfully with the cauliflower and gives the vegetarian wrap a warm, robust flavour. Serves four.

  • 4 Dempster’s® 100% Whole Wheat 10" Tortillas
  • 1/4 cup (60 mL) Extra Virgin Olive oil
  • 1 1/2 tsp (7.5 mL) curry powder
  • 2 cups (500 mL) cauliflower florets, cut into bite sized pieces
  • 1/2 cup (125 mL) Hummus
  • 1 cup (250 mL) Baby Spinach
  • 1/4 cup (60 mL) feta cheese
  • 1/4 cup (60 mL) finely chopped dried apricots (optional)


  1. Preheat oven to 400 degrees.
  2. In a small bowl mix the olive oil with the curry powder until blended. Set aside
  3. In a large mixing bowl toss the cauliflower florets with the curry oil until evenly coated.
  4. Spread on a baking sheet and roast for 15 minutes. Let stand at room temperature for 5 minutes.
  5. Lay a tortilla on a surface.
  6. Spread 2Tbsp hummus over the whole tortilla leaving a one-inch border.
  7. Place ¼ cup baby spinach along the bottom.
  8. Top with ¼ of the roasted cauliflower, and 1Tbsp each of feta and apricots if desired.
  9. Fold in the sides and roll up.
  10. Repeat with remaining tortillas.
