Enhance any meal with this aromatic Curry Roasted Cauliflower Wrap with Hummus and Feta. Wrapped in a Dempster’s® 100% Whole Wheat Large Tortilla, the sandwich features a delicious blend of textures and tastes. Curry pairs wonderfully with the cauliflower and gives the vegetarian wrap a warm, robust flavour. Serves four.
INGREDIENTS
- 4 Dempster’s® 100% Whole Wheat Large Tortillas
- 1/4 cup (60 mL) Extra Virgin Olive oil
- 1 1/2 tsp (7.5 mL) curry powder
- 2 cups (500 mL) cauliflower florets, cut into bite sized pieces
- 1/2 cup (125 mL) Hummus
- 1 cup (250 mL) Baby Spinach
- 1/4 cup (60 mL) feta cheese
- 1/4 cup (60 mL) finely chopped dried apricots (optional)
DIRECTIONS
- Preheat oven to 400 degrees.
- In a small bowl mix the olive oil with the curry powder until blended. Set aside
- In a large mixing bowl toss the cauliflower florets with the curry oil until evenly coated.
- Spread on a baking sheet and roast for 15 minutes. Let stand at room temperature for 5 minutes.
- Lay a tortilla on a surface.
- Spread 2Tbsp hummus over the whole tortilla leaving a one-inch border.
- Place ¼ cup baby spinach along the bottom.
- Top with ¼ of the roasted cauliflower, and 1Tbsp each of feta and apricots if desired.
- Fold in the sides and roll up.
- Repeat with remaining tortillas.
