Made with store-bought falafels, these quick and easy vegetarian tacos make a fresh and healthy lunch or dinner.

Ingredients


  • 4 Dempster's® 100% Whole Wheat 7" tortillas
  • 12 prepared falafels
  • 1/2 cup (125 mL) diced tomatoes
  • 1/2 cup (125 mL) diced cucumber
  • 1/2 cup (125 mL) prepared tahini sauce, divided
  • 2 tbsp (30 mL) diced red onion
  • 2 tbsp (30 mL) finely chopped fresh parsley
  • 2 tbsp (30 mL) olive oil
  • 1 tbsp (15 mL) lemon juice
  • Pinch each salt and pepper
  • 1/4 cup (60 mL) finely crumbled feta cheese

Directions


1. Heat falafels according to package directions.

2. Meanwhile, stir together tomatoes, cucumber, 1/4 cup (60 mL) tahini sauce, onion, parsley, oil, lemon juice, salt and pepper. Let stand for 5 minutes.

3. Arrange 3 falafels down along centre of each tortilla. Top with tomato salsa. Drizzle with remaining tahini sauce and sprinkle with feta cheese. Wrap tortillas around filling.

Tip: Sprinkle tacos with za’atar seasoning or drizzle with your favourite hot sauce if desired.
