  • 2 Dempster’s® Sundried Tomato tortillas
  • 1/4 cup (60 mL) ready prepared pesto
  • 4 slices prosciutto, chopped
  • 1 tomato, diced
  • 1/2 cup (125 mL) shredded mozzarella cheese
  • 1/2 cup (125 mL) arugula
  • 1 tbsp (15 mL) olive oil


SPREAD pesto over one side of tortillas. Top ½ of each tortilla with prosciutto, tomato, cheese and arugula and fold other half over filling.

BRUSH outside of filled tortillas with oil. Grill in a skillet or panini press over medium-high heat just until toasted and cheese has melted, about 2 minute per side. Cut into wedges to serve.
