These crispy little sandwiches make an easy appetizer for the holidays.

  • 12 slices Dempster’s® Whole Wheat Bread
  • 1/4 cup (60 mL) olive oil
  • 1/2 tsp (2 mL) salt
  • 1/3 cup (75 mL) herbed cream cheese


Preheat oven to 375°F (190°C). Roll each slice of bread into 1/8-inch (3 mm) thickness using a rolling pin. Cut out shapes from bread slices using a cookie cutter; cut smaller shape in centre of half of the bread slices to make a window.

Place shapes on parchment paper–lined baking sheet; brush tops with olive oil and sprinkle with salt. Bake for about 10 minutes or until crisp. Spread bottoms of “cookies” with cream cheese; sandwich with window cutout bread slices.

Tip: For colour contrast, try using half whole wheat and half white bread.
