Hot and Smokey Sicilian Sandwich

Two slices of Dempster’s® Ancient Grain Bread are filled with Havarti cheese, salami, roasted red peppers and spinach. Home made chipotle mayo is spread on both sides for added delicious tangy flavour.

INGREDIENTS

  • 2  Slices Dempster’s® 100% Whole Grains Ancient Grains Bread , lightly toasted
  • 2 tbsp (30 mL) Chipotle mayonnaise
  • 8  Slices Capocollo and/or salami
  • 1  Slice spicy Havarti cheese
  • 1/2  Roasted red pepper, cut into strips
  • 1/4 cup (60 mL) Baby spinach leaves
  • 1 cup (250 mL) Mayonnaise
  • 1  Clove garlic, minced
  • 1/2 tsp (2 mL) Horseradish
  • 1  Chipotle in adobo sauce, finely chopped
  • 2 tsp (10 mL) Lemon juice
  • Salt and pepper

DIRECTIONS

  1. WHISK together all of the ingredients for the chipotle mayonnaise.
  2. SPREAD each slice of bread with chipotle mayonnaise.
  3. TOP one slice with meat slices, cheese, peppers, spinach and the remaining slice of bread.

Tip: Leftover chipotle mayonnaise can be stored in the refrigerator for up to 3 weeks. Use as a dip for vegetables or a sandwich spread.
