Our Greek Yogurt Egg Salad Sandwich is a satisfying take on a lunchtime classic. Using Greek yogurt instead of mayonnaise adds a tangy touch and Dempster’s® White Bread serves as a soft and satisfying base. You'll never want to go back to a standard egg salad sandwich again. Serves two.
INGREDIENTS
- 4 slices Dempster's ® White bread
- 2 hard-cooked eggs
- 1/4 cup (60 mL) plain 2% Greek yogurt
- 1/4 tsp (1 mL) each salt, pepper and dill
- Pinch paprika
- 1/3 cup (75 mL) diced avocado
- 1/3 cup (75 mL) diced Roma tomato
- 1 cup (250 mL) fresh arugula (loosely packed)
DIRECTIONS
- Mash together eggs, yogurt, salt, pepper, dill and paprika. Fold in avocado and tomato.
- Spread egg mixture evenly over 2 slices of bread; top with arugula. Top with remaining slices of bread.
