Our Hummus and Sun-Dried Tomato Spinach Tortilla Wrap is a satisfying plant-based lunch option. Simply spread your favourite hummus onto Dempster’s® Spinach Large Tortillas and top with sundried tomatoes, sprouts and other veggies to keep this recipe light, flavourful and vegetarian-friendly. Serves four.
INGREDIENTS
- 4 Dempster's® Spinach Large Tortillas
- 1/2 cup (125 mL) hummus
- 1/2 cup (125 mL) chopped sun-dried tomatoes
- 2 cups (500 mL) sprouts
- 2 cups (500 mL) grated carrots
- 2 cups (500 mL) grated zucchini
DIRECTIONS
- Spread hummus down along center of each tortilla, leaving small border at either end.
- Sprinkle with sun-dried tomatoes.
- Top with sprouts, carrots and zucchini.
- Fold up bottom of tortilla over filling, then fold in sides and roll up tightly.
- Cut each wrap in half.
