Simple but satisfying, this Vegetarian Three Cheese Mushroom Melt Sandwich is sure to impress. Featuring a soft and savoury blend of mushrooms, cheese and herbs atop delicious Dempster’s® White Bread, this open-faced sandwich is an easy fall and winter menu option. Just add a fresh green salad on the side for a versatile vegetarian meal. Serves four.

  • 4  Slices Dempster’s® White Bread, toasted
  • 3 tbsp (45 mL) Butter
  • 1  Shallot, chopped
  • 1  (12 oz/340 g) Package assorted mushrooms, sliced
  • Salt and pepper
  • 1  Sprig fresh thyme
  • 1/3 cup (80 mL) Shaved Parmesan cheese
  • 1/3 cup (80 mL) Grated Asiago cheese
  • 1/3 cup (80 mL) Grated Provolone cheese


  1. HEAT butter in a large skillet over medium-high heat. Sauté shallots for 1-2 minutes or until fragrant and tender. Add mushrooms and cook, stirring for 3-4 minutes or until softened and evenly browned. Season with salt, pepper and fresh thyme.  PREHEAT broiler to high. Spoon mushroom mixture evenly between the four slices of toasted bread. Top with cheeses and broil for 2-3 minutes or until cheese is melted and bubbly.

Tip: Serve with a fresh green salad.
