Sweet and savoury flavours come together perfectly in this Ham and Goat Cheese Panini with Radicchio and Figs. Dempster’s® 100% Whole Grains Ancient Grains with Quinoa Bread acts as the perfect base for this delicious grilled sandwich. Try drizzling balsamic glaze over top for a flavourful finish or replacing the ham with prosciutto to change things up. Serves four.

INGREDIENTS

  • 8 slices Dempster's® Ancient Grains with Quinoa Bread
  • 1 cup (250 mL) thinly sliced radicchio
  • 1/2 cup (125 mL) crumbled goat cheese
  • 8 fresh figs, sliced
  • 8 slices Black Forest ham
  • Balsamic glaze (optional)

DIRECTIONS

  1. Preheat panini press to medium. Layer radicchio, goat cheese, figs and ham over 4 slices of bread; cap with remaining bread.
  2. Grill for 3 to 5 minutes or until bread is lightly toasted and filling is warm. Drizzle with balsamic glaze before serving (if using).

Tip: Make these panini perfect for entertaining by using prosciutto in place of the ham.
