Mini Egg White Breakfast Bites

INGREDIENTS

  • 12 Dempster’s® Original Medium Tortillas
  • Cooking spray
  • 12 Prosciutto slices
  • 2 cups Egg White
  • 4 tbsp Chives, minced
  • 1/2 cup Red Peppers, finely chopped
  • Salt and Pepper, to taste

DIRECTIONS

  1. Preheat the oven to 350°F (176°C)
  2. Cut each tortilla into a 5-inch circle.
  3. Grease a 12-cup muffin tray with cooking spray and fill with tortillas. Line the tortilla with prosciutto.
  4. In a small bowl, whisk egg whites, chives, red peppers, salt and pepper.
  5. Divide the egg mixture between the tortilla cups.
  6. Place the muffin tray on a cooking sheet and bake for 30-35 minutes or until the eggs are set. If the tortillas start getting too dark, cover with foil for the last 10 minutes.

Tip : you can keep these in the fridge for up to 3 days and just reheat before eating!
