Honey Dijon Chicken Wrap

INGREDIENTS

  • 2 Dempster's® Original Large Tortillas
  • 1/4 cup (60ml) Honey
  • 1/4 cup (60ml) Mayonnaise
  • 1/4 cup (60ml) Dijon Mustard
  • 1 tbsp (15ml) White Vinegar
  • 1/2 lb boneless/skinless chicken breast (2 small chicken breasts)
  • 1 tbsp (15ml) Extra Virgin Olive Oil
  • Salt and Pepper, to taste
  • 1 cup (35g) Baby Spinach
  • 1/2 cup (100g) Cherry Tomatoes, sliced in half (8 cherry tomatoes)
  • 1/2 cup Avocado (70g), sliced (1/2 medium avocado)
  • 1/4 cup (6g) Microgreens, optional

DIRECTIONS

  1. In a small bowl, combine honey, mayonnaise, dijon mustard and white vinegar. Set aside.
  2. Pat the chicken breasts dry, coat with olive oil and sprinkle with salt and pepper. Grill for 5 minutes on each side, until cooked through (an internal temperature of 165ºF / 75ºC)
  3. Cut the chicken into long strips. Divide spinach, cherry tomatoes and avocado between tortillas, and top with chicken strips and microgreens.
  4. Drizzle with the honey dijon dressing, roll up and serve.

Tip: Add bacon for extra crispiness.
Tip: Reserve extra Dijon dressing and use it on your salads for up to a week.
