Salmon Sushi Roll with Spicy Soy Mayo Sauce

INGREDIENTS

Sushi-Style Tortilla Roll:

  • 2 Dempster’s® Original or Whole Wheat Large Tortillas
  • 1 cup Sushi Rice, cooked
  • 1 tbsp Rice Wine Vinegar
  • 1 tsp Sugar
  • 1 - 8oz Salmon Fillet, cooked
  • 2 Snack-Size Toasted Nori Sheets
  • 1 cup Matchstick-Cut Cucumbers
  • 1 cup Matchstick-Cut Carrots
  • 1/2 cup Red Cabbage, thinly sliced
  • 1/2 cup Avocado, peeled, pitted, and sliced
  • Salt and Pepper, to taste

Spicy Soy Mayo Sauce:

  • 2 tbsp Spicy Mayo
  • 1 tbsp Mayonnaise
  • 1 tbsp Soy Sauce
  • 2 tsp Rice Wine Vinegar
  • 1 tsp Sugar

DIRECTIONS

Spicy Soy Mayo Sauce:

  1. In a small bowl, stir together soy sauce, spicy mayo, regular mayo, rice wine vinegar, and sugar until combined.

Sushi-Style Tortilla Roll:

  1. Reheat the rice in the microwave for 30 seconds to 1 minute. Stir in rice wine vinegar and sugar.
  2. Flake salmon into large chunks. Tear nori sheets into 1-inch pieces.
  3. Place tortillas on a clean work surface. Spread rice mixture evenly over each tortilla, then top with salmon, cucumbers, carrots, cabbage, avocado, and nori pieces. Roll up tightly and set aside.
  4. Cut the tortilla into 1-inch pieces. Serve with soy mayo sauce.
