Update your lunchtime menu with our flavourful Bacon and Ranch Egg Salad Bagel Sandwiches. Crispy bacon and creamy ranch dressing ensure these savoury sandwiches served on Dempster’s® Sesame Bagels don't disappoint. Serves 2.
INGREDIENTS
- 2 Dempster’s® Sesame Bagels, toasted
- 4 eggs
- 1/4 cup (60 mL) ranch dressing
- 2 slices bacon, cooked and crumbled
- 2 green onions, thinly sliced
- 2 lettuce leaves
- 4 slices tomatoes
DIRECTIONS
- Place eggs in bottom of large saucepan in single layer; pour in enough cold water to cover eggs by at least 1 inch (2.5 cm). Bring to boil over high heat; cover and remove from heat. Let stand for 12 minutes; drain and rinse under cold water. Peel and chop eggs. Let cool completely.
- Combine chopped eggs, ranch dressing, bacon and green onions.
- Layer lettuce, tomatoes and egg salad mixture over bottom half of each toasted bagel. Cap with tops of bagels.
Tip: As a variation, substitute Caesar dressing for ranch dressing.
