Cottage Cheese and Tomato Open-Faced Sandwich

2 slices Dempster's® No Fat No Sugar Multigrain, toasted
1/2 cup (125 mL) cottage cheese
1 medium heirloom tomato, sliced
2 tsp (10 mL) finely chopped fresh chives
1 tbsp (15 mL) olive oil
1/4 tsp (1 mL) flaked sea salt
Spread cottage cheese over each slice of bread. Top with tomato slices and chives.
Drizzle with olive oil and sprinkle with sea salt.
Tip: Substitute ricotta for cottage cheese if preferred.
