Greek yogurt replaces the mayonnaise in this healthy version of a sandwich favourite.

Ingredients


  • 4 slices Dempster’s ® White bread
  • 2 hard-cooked eggs
  • 1/4 cup (60 mL) plain 2% Greek yogurt
  • 1/4 tsp (1 mL) each salt, pepper and dill
  • Pinch paprika
  • 1/3 cup (75 mL) diced avocado
  • 1/3 cup (75 mL) diced Roma tomato
  • 1 cup (250 mL) fresh arugula (loosely packed)

Directions


Mash together eggs, yogurt, salt, pepper, dill and paprika. Fold in avocado and tomato.

Spread egg mixture evenly over 2 slices of bread; top with arugula. Top with remaining slices of bread.
