Loaded Cheese Sheet Pan Quesadilla

If you're having a party, this is a stress free crowd pleaser that’s loved by adults and kids alike. To make this ahead assemble the sheet pan quesadilla and cover with plastic wrap refrigerated and baked before that party!

INGREDIENTS

10 Dempster’s® Original 10” Tortillas

1lbs ground beef 

1 small cooking onion diced 

3 cloves garlic minced 

1 tbsp chili powder 

1 tsp each garlic powder and smoked paprika  

2 tbsp veg oil 

3 cups shredded cheddar and Monterey Jack cheese blend 

1 red pepper diced 

1 green pepper diced 

½ cup canned black beans 

½ cup frozen corn thawed 

1 Jalapeños fresh sliced optional  

Salt and pepper to taste 

Vegetable oil cooking spray 

Note: this recipe requires 2 (9”-13” inch) baking sheets 

DIRECTIONS

  1. Preheat oven to 425F degrees 

  1. In a large non-stick skillet, add oil and heat to medium.  Add in onions and garlic and cook until starting to soften, about 2-3 minutes.  Stir in ground beef and spices for another 8 minutes until beef is no longer pink. Sprinkle it with salt and pepper to taste. Set the pan aside to cool. (Note: for a kick add sliced jalapeños while cooking the onions) 

  1. Dice red and green peppers and add them to the cooled beef mixture along with the black beans and corn. 

  1. Lightly spray all Tortillas with cooking oil spray. Place 6 tortillas in a 9 x13 inch pan with half of each tortilla overlapping around the perimeter of the pan. Place 2 more overlapping tortillas in the center of the pan to create a base.  

  1. Sprinkle the bottom of the pan evenly with half of the cheese. Top with the ground beef mixture over top of the cheese layer and spread evenly.  Top ground beef mixture with remaining cheese.  Place the remaining 2 tortillas overlapping in the center of the mixture, and fold over the remaining tortilla edges to enclose.  (Note: make sure the tortillas fully cover the mixture otherwise cheese will leak and stick to the pan.) 

  1. Spray the top of the Sheet Pan Tortilla, this helps to crisp up in the oven. Cover with a parchment sheet and top with the 2nd sheet pan.  Place in the center of the oven and bake for 25-30min until golden brown. 

  1. Once baked, leave the sheet pan quesadilla out to rest about 5-10 minutes to let the cheese set.  Cut into 12 slices.

Serve with sour cream, salsa, guacamole and lime slices.
