Simply Savoury Cacio e Pepe Scrambled Egg Bagels
Simply Savoury Cacio e Pepe Scrambled Egg Bagels bring the comforting flavours of the classic Italian pasta dish to breakfast. Cacio e Pepe is Italian for “cheese and pepper”. We took this simply satisfying recipe and combined it with Dempster’s® Signature Parmesan, Garlic & Herb Bagels for an easy dish that tastes absolutely fabulous as a breakfast bagel. Serves two.
2 Dempster’s® Signature Bagels – Parmesan, Garlic & Herb, split and toasted
2 tbsp (30 mL) 18% table cream
2 tsp (10 mL) cracked pepper, divided
1/4 tsp (1 mL) salt
3 tbsp (45 mL) butter, divided
1/3 cup (75 mL) grated Parmesan cheese
1 tbsp (15 mL) finely chopped fresh chives
Whisk together eggs, cream, half of the pepper and salt. Melt 2 tbsp (30 mL) butter in skillet set over medium heat; cook egg mixture, stirring frequently, for 5 to 7 minutes or until eggs are set and soft curds have formed. Stir in Parmesan cheese.
Spread remaining butter over bagels; divide scrambled eggs among bagels. Garnish with remaining pepper and chives.
Tip: Substitute milk, heavy cream or water for table cream if preferred.
