Tuna Melt Quesadillas

INGREDIENTS

  • 3 Dempster’s® Original 10” Tortillas
  • 2 (170 g) Cans flaked tuna
  • 1/2 Red pepper, diced
  • 1 Stalk celery, diced
  • 1 Shallot, diced
  • 1/3 cup (80 mL) Mayonnaise
  • 1 tsp (5 mL) Dijon mustard
  • 1 1/2 cups (375 mL) Grated Old Cheddar cheese, divided
  • 1/4 cup (60 mL) Melted butter

DIRECTIONS

  1. MIX together tuna, pepper, celery, shallot, mayonnaise and mustard in a medium bowl.
  2. ASSEMBLE quesadillas by sprinkling ¼ cup (60 mL) of cheese on half of each tortilla. Divide tuna filling between the three and spread on top of cheese. Top with the remaining cheese and fold in half. Brush both sides of each quesadilla with melted butter. Place in a large skillet over medium high heat and cook for 3 4 minutes per side or until golden brown and the cheese has melted.
