High Protein Marry Me Chicken Sandwich

This high-protein twist on a viral favourite layers crispy Italian-breaded chicken and a cottage cheese Marry Me sauce between Dempster’s® Protein White Bread for a sandwich that satisfies and fuels.
INGREDIENTS
- 4 Dempster’s® Protein White Bread Slices, toasted
- 2 chicken cutlets, boneless, skinless
- 3/4 tsp (3 ml) salt, divided
- 3/4 tsp (3 ml) black pepper, divided
- 1/2 tsp (2 ml) garlic powder
- 1/4 cup (60 ml) all-purpose flour
- 1 egg, beaten
- 1/2 cup (125 ml) Italian breadcrumbs
- 1/2 cup (125 ml) cottage cheese
- 1/4 cup (60 ml) milk
- 1 tsp (5 ml) dried Italian seasoning
- 1 tbsp (15 ml) oil from oil-packed sun-dried tomatoes
- 1 shallot, sliced
- 2 tbsp (30 ml) tomato paste
- 1 clove garlic, minced
- 1/2 cup (125 ml) drained sun-dried tomatoes, sliced
- 1/2 cup (125 ml) packed baby spinach
- 1/4 cup (60 ml) sliced roasted red peppers
DIRECTIONS
- Preheat air fryer to 400°F (200°C) according to manufacturer’s directions.
- Meanwhile, season the chicken cutlets with 1/2 tsp (2 ml) salt, 1/2 tsp (2 ml) pepper and garlic powder.
- Transfer flour, egg and breadcrumbs to separate shallow dishes.
- Dredge chicken in flour, shaking off excess, then dip in egg and coat with breadcrumbs, pressing to adhere. Transfer to the air fryer and lightly spray with baking spray.
- Air-fry chicken, flipping halfway through cooking, for 12 to 15 minutes or until golden, crispy and cooked through.
- Meanwhile, in a medium bowl, stir together cottage cheese, milk and Italian seasoning until smooth.
- In a medium skillet set over medium heat, heat oil from the sun-dried tomatoes. Cook the shallots for 1 to 2 minutes or until softened. Add tomato paste, garlic and sun-dried tomatoes. Cook, stirring, for 2 to 3 minutes.
- Pour in cottage cheese mixture and cook, stirring occasionally, for 3 to 5 minutes or until flavours marry and mixture has thickened slightly.
- To assemble, spread toasted bread slices with Marry Me sauce. Divide half the spinach between 2 slices. Top those with chicken, roasted red peppers and remaining spinach. Cap with the remaining bread slices.
Tips: If desired, add crumbled feta cheese to sandwiches with roasted red pepper.
For a touch of heat, add chili flakes in Step 6, if desired.
