Brie, Apricot and Arugula Tortilla Flatbread adds a sophisticated touch to lunchtime. Dempster’s® Original 10” Tortillas are topped with Brie, apricot jam and spicy arugula to deliver a rich flavour profile. This recipe also makes a crowd-pleasing appetizer for the holidays or any special occasion. Serves two.

  • 2 Dempster’s® Original 10” Tortillas, large
  • 2 tbsp (30 mL) apricot jam
  • 2 oz (60 g) Brie cheese, diced
  • 1/2 cup (125 mL) baby arugula


  1. Preheat oven to 425°F (220°C). Place tortillas on lightly oiled baking sheet. Spread jam evenly over each tortilla; sprinkle cheese over top.
  2. Bake for 8 to 10 minutes or until cheese melts and tortillas are golden. Sprinkle with arugula. To serve, cut into wedges.

Tip: Add prosciutto or cooked chicken to flatbread, if desired.
