Cheesy Garlic Quesadillas

Prepared garlic butter is a great time saver in this fast and flavourful lunch sandwich that everyone will love.
INGREDIENTS
- 8 slices Dempster's® White Bread
- 1 cup (250 mL) fresh arugula
- 36 thin slices cucumber
- 1 ripe avocado, peeled and pitted
- 2 tbsp (30 mL) lime juice
- 1 tbsp (15 mL) minced onion
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) ground cumin
DIRECTIONS
- Spread garlic butter evenly over one side of each tortilla. Sprinkle cheese over one half of each tortilla; fold over tortilla to enclose cheese.
- In large, nonstick skillet, heat oil over medium-high heat; cook for 2 or 3 minutes on each side or until golden brown and cheese is melted. Cut into wedges. Serve with marinara sauce.
Tip: Alternatively, serve with Alfredo sauce or add a pinch of hot red pepper flakes to each tortilla.
