INGREDIENTS
- 4 slices Dempster’s® Fibre Whole Grain Bread
- 2 tablespoons (30 ml) oil, divided
- 1 small onion, thinly sliced
- 1 zucchini, thinly sliced into rounds
- 1 sirloin steak
- Salt and freshly ground black pepper, to taste
- 1 roasted red pepper, quartered
- 1/2 cup (120 ml) baby arugula
- 1/4 cup (60 ml) garlic aioli
DIRECTIONS
- Heat 1 tablespoon (15 ml) of the oil in a large skillet over medium-low heat. Cook the onion for about 20 minutes, stirring occasionally, until softened and lightly caramelized. Transfer to a plate.
- Increase heat to medium-high. Add the zucchini and cook for 3 to 5 minutes, turning occasionally, until lightly golden and tender-crisp. Transfer to the plate with the onion and season with salt.
- Pat the steak dry and season both sides with salt and pepper. Heat the remaining 1 tablespoon (15 ml) oil in the same skillet over medium-high heat. Sear the steak for 3 to 4 minutes per side for medium-rare, or until cooked to the desired doneness.
- Transfer the steak to a cutting board and let rest for 5 minutes. Slice thinly against the grain.
- Arrange the steak, caramelized onion, zucchini and roasted red pepper over 2 bread slices. Top with arugula.
- Spread the garlic aioli over the remaining bread slices and close the sandwiches. Cut in half and serve warm.
