Easy Steak, Zucchini & Arugula Sandwich

This easy steak sandwich layers tender sirloin, caramelized onion, golden zucchini, roasted red pepper and peppery arugula on the delicious Dempster’s® Fibre Whole Grain Bread. It serves 2 and makes a satisfying lunch or weeknight dinner.

INGREDIENTS

  • 4 slices Dempster’s® Fibre Whole Grain Bread
  • 2 tablespoons (30 ml) oil, divided
  • 1 small onion, thinly sliced
  • 1 zucchini, thinly sliced into rounds
  • 1 sirloin steak
  • Salt and freshly ground black pepper, to taste
  • 1 roasted red pepper, quartered
  • 1/2 cup (120 ml) baby arugula
  • 1/4 cup (60 ml) garlic aioli

DIRECTIONS

  1. Heat 1 tablespoon (15 ml) of the oil in a large skillet over medium-low heat. Cook the onion for about 20 minutes, stirring occasionally, until softened and lightly caramelized. Transfer to a plate.
  2. Increase heat to medium-high. Add the zucchini and cook for 3 to 5 minutes, turning occasionally, until lightly golden and tender-crisp. Transfer to the plate with the onion and season with salt.
  3. Pat the steak dry and season both sides with salt and pepper. Heat the remaining 1 tablespoon (15 ml) oil in the same skillet over medium-high heat. Sear the steak for 3 to 4 minutes per side for medium-rare, or until cooked to the desired doneness.
  4. Transfer the steak to a cutting board and let rest for 5 minutes. Slice thinly against the grain.
  5. Arrange the steak, caramelized onion, zucchini and roasted red pepper over 2 bread slices. Top with arugula.
  6. Spread the garlic aioli over the remaining bread slices and close the sandwiches. Cut in half and serve warm.
