This garden-fresh snack will keep you feeling satisfied and help you stay on the healthy eating track.

  • 2 slices Dempster’s® Whole Grain Multigrain Bread, toasted
  • 1 ripe avocado, peeled and pitted
  • 1 tbsp (15 mL) lemon juice
  • 1/4 tsp (1 mL) salt
  • 8 thin slices English cucumber
  • 8 thin slices tomatoes
  • 2 tbsp (30 mL) diced red onion
  • 1/4 tsp (1 mL) pepper


Mash together avocado, lemon juice and salt; spread evenly over toast.

Top with sliced cucumber, tomatoes and red onion. Sprinkle with pepper.

Tip: Add red leaf, Bibb lettuce or arugula to the sandwich if desired.
Tip: For added crunch, top with pumpkin or sunflower seeds.
