High Protein Smoked Salmon Bagels with Crispy Capers

With herby cottage cheese, smoked salmon, a golden fried egg and crispy capers, this protein everything bagel toast makes breakfast both satisfying and gourmet.

INGREDIENTS

  • 2 Dempster’s® Protein Everything Bagels, halved and toasted
  • 1/4 cup (60 ml) cottage cheese
  • 4 tsp (20 ml) chopped fresh dill, divided
  • 1/2 tsp (2 ml) lemon zest
  • 1 tsp (5 ml) lemon juice
  • 4 tsp (20 ml) olive oil, divided
  • 2 tbsp (30 ml) drained capers
  • 2 eggs
  • Pinch salt
  • Pinch black pepper
  • 1/4 cup (60 ml) packed baby arugula
  • 4 slices smoked salmon
  • 2 tbsp (30 ml) sliced red onion

DIRECTIONS

  1. In a small bowl, stir together cottage cheese, 2 tsp (10 ml) dill, lemon zest and lemon juice.
  2. Using a vegetable peeler, slice the cucumber lengthwise into thin ribbons.
  3. In a medium skillet set over medium heat, heat 2 tsp (10 ml) oil. Cook capers, stirring occasionally, for 3 to 4 minutes or until crispy. Transfer to a plate lined with a paper towel to drain. Wipe the skillet clean.
  4. Add remaining oil to the skillet and crack eggs into the pan. Cook for 3 to 5 minutes or until whites are set and yolks are cooked to preferred doneness. Season with salt and pepper.
  5. To assemble, top each bottom bagel half with arugula, cottage cheese mixture, smoked salmon, red onion and fried egg. Garnish with crispy capers, remaining dill, and cap with bagel top halves.

Tips: If preferred, substitute baby arugula with baby spinach.
For a touch of heat, drizzle with chili crisp, if desired.
