High Protein Smoked Salmon Bagels with Crispy Capers

With herby cottage cheese, smoked salmon, a golden fried egg and crispy capers, this protein everything bagel toast makes breakfast both satisfying and gourmet.
INGREDIENTS
- 2 Dempster’s® Protein Everything Bagels, halved and toasted
- 1/4 cup (60 ml) cottage cheese
- 4 tsp (20 ml) chopped fresh dill, divided
- 1/2 tsp (2 ml) lemon zest
- 1 tsp (5 ml) lemon juice
- 4 tsp (20 ml) olive oil, divided
- 2 tbsp (30 ml) drained capers
- 2 eggs
- Pinch salt
- Pinch black pepper
- 1/4 cup (60 ml) packed baby arugula
- 4 slices smoked salmon
- 2 tbsp (30 ml) sliced red onion
DIRECTIONS
- In a small bowl, stir together cottage cheese, 2 tsp (10 ml) dill, lemon zest and lemon juice.
- Using a vegetable peeler, slice the cucumber lengthwise into thin ribbons.
- In a medium skillet set over medium heat, heat 2 tsp (10 ml) oil. Cook capers, stirring occasionally, for 3 to 4 minutes or until crispy. Transfer to a plate lined with a paper towel to drain. Wipe the skillet clean.
- Add remaining oil to the skillet and crack eggs into the pan. Cook for 3 to 5 minutes or until whites are set and yolks are cooked to preferred doneness. Season with salt and pepper.
- To assemble, top each bottom bagel half with arugula, cottage cheese mixture, smoked salmon, red onion and fried egg. Garnish with crispy capers, remaining dill, and cap with bagel top halves.
Tips: If preferred, substitute baby arugula with baby spinach.
For a touch of heat, drizzle with chili crisp, if desired.
