Italian-Style Pigs in a Blanket Tortilla Wraps are savoury snack options any time of day. Satisfying Italian sausage and rich and creamy Fontina cheese are rolled up into tasty Dempster’s® 100% Whole Wheat 10'' Tortillas in this quick-and-easy recipe. Dip wraps in Spicy Red Pepper Tomato Sauce for the perfect party appetizers or to keep you going while you watch the game. Serves 12.
3 Dempster’s® 100% Whole Wheat 10" Tortillas
3 cooked Italian sausages
6 slices Fontina cheese
3 tbsp (45 mL) grated Parmesan cheese
3/4 cup (175 mL) roasted red peppers
2 tbsp (30 mL) olive oil
2 garlic cloves, minced
1/4 tsp (1 mL) hot pepper flakes
1 1/2 cups (375 mL) tomato sauce
1/4 tsp (1 mL) salt
Place roasted red peppers in food processor; purée until smooth. Remove from processor and set aside. In saucepan, heat olive oil over medium heat; cook garlic and hot pepper flakes for 1 to 2 minutes or until softened. Stir in tomato sauce, red pepper purée and salt; bring to simmer. Reduce heat to low; simmer, stirring occasionally, for 10 to 15 minutes or until thickened slightly.
Line large baking sheet with parchment paper. Place tortillas on clean work surface. Place 2 cheese slices along centre of each tortilla; top with sausage. Roll up tightly, trimming ends of tortilla to line up with sausage. Cut into 4 pieces, securing with toothpicks.
Arrange on prepared pan; coat tops with cooking spray and sprinkle with Parmesan cheese. Bake in 400°F (200°C) oven for 10 to 12 minutes or until sausage is heated, cheese melts and tortillas are golden. Serve with Spicy Red Pepper Tomato Sauce.
Tip: Use a prepared red pepper sauce if desired.
