Pomegranate, Goat Cheese and Avocado Toast

Goat cheese and pomegranate add zesty flavour to the smooth avocado.
INGREDIENTS
- 2 slices Dempster's® Whole Grain Multigrain Bread, toasted
- 1 ripe avocado, peeled and pitted
- 1 tbsp (15 mL) lemon juice
- 1/4 tsp (1 mL) salt
- 2 tbsp (30 mL) crumbled goat cheese
- 1 tbsp (15 mL) toasted pumpkin seeds
- 1 tbsp (15 mL) pomegranate seeds
DIRECTIONS
- Mash together avocado, lemon juice and salt; spread evenly over toast.
- Top with crumbled goat cheese. Sprinkle with pumpkin seeds and pomegranate seeds.
Tips:
Replace goat cheese with crumbled feta cheese if desired.
Replace pumpkin seeds with toasted pecans if desired.
