INGREDIENTS
- 8 slices Dempster’s® 100% Whole Grains Ancient Grains with Quinoa Bread, toasted
- 1 ripe avocado, peeled, pitted and coarsely mashed
- 1 apple, cored and sliced
- 3 cups (750 mL) shredded and stemmed kale
- 2 tbsp (30 mL) extra virgin olive oil
- 1 tbsp (15 mL) apple cider vinegar
- 1 tsp (5 mL) grainy mustard
- 1/2 tsp (2 mL) honey
- 1/4 tsp (1 mL) each salt and pepper
DIRECTIONS
- Sandwich: Spread mashed avocado evenly among 4 bread slices. Top with apple slices and Kale Salad. Cap with remaining bread slice. Serve immediately.
- Kale Salad: Toss and massage shredded kale with olive oil. Toss in apple cider vinegar, mustard, honey, salt and pepper.
