Zesty Italian Pesto Cheeseburgers are a tasty twist on a classic favourite. With sun-dried tomatoes and a simple pesto mayo on Dempster’s® Signature Gold Hamburger Buns, this Italian cheeseburger delivers delicious flavours in every bite. Serves four.
INGREDIENTS
- 4 Dempster’s® Signature Gold Hamburger Buns, split and toasted
- 1/4 cup (60 mL) mayonnaise
- 1/4 cup (60 mL) pesto
- 1 lb (500 g) lean ground beef
- 1/2 tsp (2 mL) each salt and pepper
- 2 tbsp (30 mL) canola oil
- 4 slices mozzarella cheese
- 1/2 cup (125 mL) finely chopped sun-dried tomatoes
- 1 cup (250 mL) arugula
DIRECTIONS
- Stir together mayonnaise and pesto; set aside. Mix together ground beef, salt and pepper. Divide into 4 portions; shape each portion into 1/2-inch (1 cm) thick patty.
- Heat oil in large skillet set over medium heat; cook burgers, turning halfway through, for 5 to 7 minutes or until instant-read thermometer inserted in centre of burger reads 160°F (71°C). Top each burger with cheese slice; cook for about 1 minute or until cheese starts to melt.
- Assemble burgers in buns with pesto mayonnaise, sun-dried tomatoes and arugula.
Tip: Substitute fontina or provolone for mozzarella cheese if desired.
