            This Tarragon Chicken Salad Sandwich is a tasty twist on a familiar favourite. A dash of tarragon adds a pop of flavour to a classic chicken salad recipe. When paired with Dempster’s® 100% Whole Grains Multigrain Bread, it delivers a delicious and elevated lunch. Serves two.
INGREDIENTS
- 2 slices Dempsters® 100% Whole Grain Multigrain Bread, toasted
 - 1 cup (250 mL) shredded cooked rotisserie chicken
 - 1 stalk celery, finely diced
 - 1/4 cup (60 mL) halved red grapes
 - 3 tbsp (45 mL) mayonnaise
 - 1 tbsp (15 mL) chopped fresh tarragon
 - 1 tbsp (15 mL) chopped fresh chives
 - 1 tsp (5 mL) lemon juice
 - Pinch each salt and pepper
 - Fresh tarragon sprigs (optional)
 - 1 tbsp (15 mL) chopped toasted cashews (optional)
 
DIRECTIONS
- Toss together chicken, celery and grapes. Stir in mayonnaise, tarragon, chives, lemon juice, and salt and pepper to taste.
 - Divide chicken mixture evenly between 2 slices of multigrain bread. Garnish with tarragon sprigs and cashews (if using).
 
Tip: Replace tarragon with parsley or cilantro if desired.
