Vegetarian Super Salad Sandwich

Whole grains take your lunchtime salad to the next level in this Vegetarian Super Salad Sandwich recipe. Bursting with the flavour of avocado, eggs, tomatoes and more on Dempster’s® 100% Whole Grains 12 Grain Bread, this sandwich has the fibre and crunch to keep you going. Serves two.

  • 4 slices Dempster’s® 100% Whole Grains 12 Grain Bread
  • 2 eggs
  • 1 small red onion
  • 1/4 cup (60 mL) red wine vinegar
  • 1/4 cup (60 mL) light mayonnaise
  • 8 pieces of each, leaf and Boston lettuce
  • 8 large Tomato slices
  • 16 cucumber slices
  • 1/2 Ripe avocado, sliced
  • Pinch each sea salt and fresh cracker pepper
  • 1 tbsp (15 mL) olive oil


  1. BOIL eggs for 10 minutes and transfer to ice water. Peel and slice.
  2. SLICE red onions and toss in bowl with vinegar and let sit while assembling sandwich.
  3. TOAST bread and spread mayonnaise lightly over each slice.
  4. DIVIDE leaf and Boston lettuce over 4 pieces of the toast. Top with tomatoes, cucumber, red onions, avocado and sliced egg.
  5. SPRINKLE each with salt and pepper and top with remaining bread to make sandwiches.
