Packed full vitamins and nutrients, avocado makes the perfect addition to this traditional Egg Salad Sandwich.
INGREDIENTS
- 4 Slices Dempster’s® 100% Whole Grains 12 Grain Bread
- 3 Hard-boiled eggs, peeled and chopped
- 1 tbsp (15 mL) Light mayonnaise or whipped salad dressing
- Dash of hot sauce (optional)
- ½ Avocado, diced
- Salt and pepper
- 1 Tomato, sliced
- ½ cup (125 mL) Baby arugula
DIRECTIONS
- MIX chopped eggs, mayonnaise (or whipped salad dressing), hot sauce (if using), avocado, salt and pepper in a small bowl.
- DIVIDE the egg salad between two slices of bread. Top each with tomato slices and arugula. Season with salt and pepper and top with remaining slices of bread.
